Bark Mad

Ever run across those old family recipes that turn out to rather more modern that you would have thought? Take bark, from the family of OHS. Turns out to be made with saltines! You lay out about one package (of the two or four in the box) of them out flat on a foil lined rimmed pan (jellyroll pan or the like). Melt one pound butter with one cup sugar and boil for 3 minutes; pour this over the saltines, spreading as necessary to cover all. Bake for 5-7 minutes at 350. Take out of oven and pour on a package of bittersweet chocolate chips. Let the chips melt for a minute or two and spread them liberally over all. Add nuts. Dried cherries or cranberries could be nice, too. Let chill for a couple of hours. We put it outside to let winter take care of it since the refrigerator here at Casa Bachelor is small. Break it up and eat, store the rest in the fridge. It is so good! Kiss $25 a pound salted chocolates goodbye.
