One ring to rule them all

A pineapple ring, that is. I made my first pineapple upside-down cake this weekend. Tasty stuff.

Beauty! My favorite next to Key Lime pie dessert! Oh, and lemon pie & strawberry-rhubarb - ONLY when my Gram makes it.

No rum, although I like that idea. This was a Joy of Cooking recipe from 1951 (not that that would necessarily be anti-rum). The cake was a sponge, but I gather there are many variations.
